What type of oil did you spill on the stone. If you are talking about motor oil , you can use a degreaser then use an ammonia based cleaner, but you will probably still have a small stain, once oil settles on sandstone it will absorb about a 1/4 inch, or you can grind the spot out depending on the size, but will have a small rut..

I'm not sure. My mother-in-law spilled a bunch of grease on our stone work a few years ago before I had any sealer and the stain is still there. It has faded away nicely, so you barely notice it.
